This Wild Ale is obtained through spontaneous fermentation with the addition of passion fruit. After the wort immersion in bariques, a slow fermentation process begins, lasting for five months, followed by a period of maturation and refinement. During this phase, the passion fruit is introduced, infusing freshness and vitality to the beer's already sour and wild profile. Its apricot color with beige foam anticipates an exotic aromatic bouquet dominated by maracuja. On the palate, despite its complexity, it offers a surprising smoothness. The medium body provides fullness and structure to the drink, while the acidity and liveliness of the passion fruit enrich the tasting experience. It's a complex beer yet incredibly approachable.
